mini smores cupcakes a la emily (by way of martha and sew darn cute)


The people who have benefited the most from my new endeaver into the world of baking are my husband and my co-workers. I on the other hand do not need another excuse to eat sweets but what is a girl to do, I needed a hobby! So these are for a co-worker's birthday tomorrow (happy b-day JY!) and I think they turned out decent. I do prefer the mini cupcakes, they are much easier to frost!

I used the "one bowl chocolate cupcake" recipe from my Martha cupcakes book. Good chocolate taste but not as moist as I would have liked, very easy to make though.


There are several recipes out there for marshmallow frosting but I wanted something super easy that I wouldn't mess up, me versus frosting = 0-2 thus far. Plus I don't have a nifty culinary torch (yet) which most of them called for. I found this recipe on Sew Darn Cute and I may have actually succeeded! I would have thought the marshmallow flavor would have been more prevalent but still very yummy, especially once you add the graham cracker crumbles and Hershey bar slice. I cut the Hershey slice in half since they were mini cupcakes.


And doesn't the frosting job look much better?? My new kit worked great, especially on the minis, it was so easy. There you have it, another day in the kitchen and I do think progress has been made, success! Now I am off to watch the Mad Men finale.

  3. Thanks, Emily! What can I say? I'm so honored to be a recipient of these awesome looking cupcakes. And what progress you made w/ the frosting! Maybe one day, you can come up with your own signature frosting style. I can't wait to the next adventure!
