
The results are in, thanks so much to those who took the time to vote, and white chocolate snowballs came out on top. I got the recipe from Real Simple and yes, it was fairly simple, although prepare to have toasted coconut everywhere!
I must say, mixing dough for cookies is a a lot tougher than for cupcakes. Especially when you are trying to make 3 batches at once (I don't recommend this). Luckily my husband was nearby taking pictures so he could step in and mix once my arm was about to fall off.



Form the dough into teaspoon size balls, try to be as consistent as possible, it helps to have them all a similar size for when you are pairing them together later. When rolling the dough balls into the coconut be very generous. I was only covering them lightly at first but once I realized how much flakes off in the process of cooking them, transferring them and then assembling them, I figured it was better to go a little crazy with the coconut.




Let the cookies cool completely, overnight if possible. Then melt the white chocolate, yummm. You don't need a lot of white chocolate per snowball cookie, press lightly with the top cookie otherwise all the chocolate will ooze out the sides. It helps to put the sheet of completed snowballs in the fridge so that the chocolate sets more quickly. And ta da!



Now get out your vacuum because I guarantee there will be flakes of coconut all over your kitchen floor!
