whoopie pies (zingerman's)


I know I am a little late (ok a lot late) but...Happy St. Patrick's Day! Whoopie pies won the last poll by one vote so I decided to tie them in with the holiday. I used this recipe from Zingerman's (I LOVE ZINGERMAN'S) via the New York Times for the cake portion and then this recipe from Stylish Cuisine for the filling. I wanted a marshmallow filling versus a buttercream filling. I have never had a "real" whoopie pie but from what I gather the more traditional ones are filled with the marshmallow. They were fairly easy to make, I did run out of frosting, ooops. Also, note to self I need a smaller ice cream scoop. The one I used to measure the cake part of the pies was huge, definitely a challenge to eat one of these bad boys in one sitting.


You will probably notice I didn't start taking pictures until half way through, oops again, American Idol was clearly a distraction for me (so sad Alex Lambert is gone BTW).
A little food coloring and viola, whoopies suited for the hungriest of leprechauns!



My co-workers all gave them two thumbs up as well as my husband. I personally was not a huge fan, too much cake action for me. I am much more of a cookie/brownie girl. My husband asked me today if cookies and brownies would become the next "big thing." Umm hello when did they ever stop? If they need to make a comeback then count me in!

Misha was our frosting tester, hard to tell if she approves or not...
